Best Celery Root Mashed Potatoes with Pesto Beans and Balsamic Beets

Celery root is a delicious vegetable that just doesn’t get enough love! Combining it with potatoes is a scrumptious and unintimidating way to try out this garden gem. Maybe you’ll even write home about it 😉

I love cooking with many different types of veggies. Eating a wide variety of plants is one of the best ways to build better gut health and grow a thriving microbiome. For more ways to improve gut health, check out this post.

With diversity in mind- and my love for food- I created this healthy recipe!

Celery Root Mashed Potatoes with Pesto Beans and Balsamic Beets – Serves 4-6

For the mashers:

2 celery roots, peeled and cubed

3 medium red potatoes, peeled and cubed

2 large garlic cloves, minced

salt and pepper

veggie broth

canned coconut milk (I never buy light)

Boil celery roots and potatoes in a mixture of 1/2 veggie broth 1/2 water until tender, then drain (or even better- save broth for future use.) Cook garlic in a saucepan with a little water or broth until fragrant. Combine garlic and root/potato mixture, and mash. Add small amounts of coconut milk while mashing until you reach a desired consistency. Add salt and pepper to taste.

For the beans:

15 oz cooked, great northern or similar beans (you can also use canned- drained and rinsed)

pesto (I used homemade carrot top pesto)

Warm beans in a small saucepot with an amount of pesto to your liking.

For the beets:

3/4 cup balsamic vinegar

1 package Love Beets cooked beets, drained and diced

pepper

Reduce balsamic vinegar and beet mixture in a saucepan over low-medium heat until syrupy. Sprinkle with freshly ground pepper.

Serve:

Place a scoopful of mashers on a plate, and top with beans and beets. Serve with a side. (I steamed a mixture of broccoli and romanesco and sprinkled it with a little chili pepper sea salt.)
