Good Mood Food – Bright Zoodle Salad Recipe

If you know me, you know that mental wellness is always at the forefront of my mind. Many of you know that I like to talk about gut health too, since it is so tightly linked to the way we feel.

Do you ever just eat like garbage?

I mean, the love for tasty, nourishing food is hard-wired into me, but really… Who eats healthy all of the time?? I know I don’t.

Think about how you feel then afterwards. I sort of feel like what I ate.

It’s easy to think it’s related to guilt or overindulgence. And maybe that’s a part of it for some people. However, there is a true, biological reason for this too. Our gut (and what we eat) is connected to our mind through many different pathways. This can be summed up rather simply:

When we eat a diverse diet of healthy, nutrient-dense food, we feel better.

The other night, I was throwing together a super quick dinner, and I needed a side. I had a zucchini in my fridge, so I made a salad that took about 5 minutes. It was so simple, fresh, and delicious. I want to share it with you!

Bright Zoodle Side Salad

  • 1 zucchini, spiralized
  • drizzle of olive oil
  • drizzle of white balsamic vinegar
  • freshly ground pepper
  • garlic salt, to taste
  • squeeze of citrus
  • freshly snipped chives
